Notes from the Chef, December 16, 2011: Tostada Day!

Happy Friday! Let’s celebrate with a tasty tostadas bar and an array of delicious sides like refried beans, sweet & spicy roasted yams, and a du Puy lentil salad. Lentils were one of the first domesticated crops and have been part of the human diet since Neolithic times. Archeological evidence shows they were being eaten 13,000 to 9,500 years ago. The lentils in today’s salad originated in the Le Puy region of France. Their unique quality and flavor comes from their high protein and relatively low carbohydrate content. Lentils have the third-highest level of protein, by weight, of any plant-based food after soybeans and hemp, and are an essential source of vegan protein in many parts of the world.
