Notes from the Chef, December 20, 2011: Tropical Paradise!

Let’s forget the cold and head to the islands for a tropical adventure! Today’s lunch is full of island flavors like jerk-spiced ribs slow roasted to perfection and a mixed green salad with pineapple and cumin-toasted almonds. Be sure to try the pigeon peas – they can be found in traditional dishes of the Dominican Republic, Puerto Rico and Trinidad. They contain high levels of protein and amino acids, making them an important source of vegetarian protein. Pigeon peas are also very drought-resistant and can grow using fewer resources than other crops. We hope you enjoy today’s island adventure!
