Notes from the Chef, December 15, 2011: Jamaican Me Crazy
Tonight Gastronaut is taking you to the islands with a menu featuring examples of Jamaican dishes and ingredients. Jamaican cuisine is a blend of the cooking techniques, ingredients, and spices brought to the country by the Spanish, British, African, Indian, and Chinese people that have inhabited, colonized, or visited Jamaica since Columbus’ arrival in the 16th Century. We’re serving up mahi-mahi poached in spicy coconut and ginger broth, a fish high in protein, low in saturated fat and calories and rated as a “Best Choice” by the Monterey Bay Aquarium. Irie mon!
