Notes from the Chef, December 9, 2011: Good Food Friday

It’s Friday, and at Gastronaut we like any excuse to have a delicious lunch. Today we’re serving up some simple delectable dishes like grilled sous vide tri tip, chipotle polenta, and black-eyed pea salad. Black-eyed peas are a bean with origins in West Africa and Asia that has been cultivated in America since the 17th Century. This humble legume is an essential ingredient of soul food cuisine and can be found in dishes all over the South. Black-eyed peas are valued as a crop because it adds nitrogen to the soil and has high nutritional value. Black-eyed peas are especially rich sources of potassium, zinc, dietary fiber and iron.
